They will stain in the presence of things like tomato sauce, turmeric, and hot oils. That's unfortunate but not a deal-breaker for me, so long as they work properly.
Their key issue, the one that may a no-go issue for some users, is that they will burn at or after around 400 degrees. They definitely will burn at 425. This is well below the temperature limit that the product is supposed to be able to take.
Now I don't know whether that's the way they are from day one or whether they became more likely to burn after a series of use and washing possibly eroded their silicone coating. Either way, that's a huge failure when the product is supposed to have a much more robust temperature tolerance.
Myself, I was using them at lower temperatures until recently. When I started trying to use them at 400-450, that's when they went downhill after a couple of uses.
From my experience I would say they are viable up until 375-400. After that point, they will not survive and you'll end up having to toss and replace them as I am now forced to do.
Buyers beware! These are good, but only good to a point that is well below what we are being told will actually work with them.
If you don't plan to use them beyond 400 degrees, you should be OK. If you may want to go past that temperature, you will want some other option than these mats.
These things BURN. and even at 350. There is a quality control problem and my advice is DONT BUY
I’ve had these mats and we use them almost daily for almost a year now. They still look brand new and I have had no problems with staining, melting or the mats becoming worn. When using them, I cook most items at 375 degrees but have used them at up to 425 degrees several times with no issues so far. For clean up, I generally drape them over my cups in the top rack of the dishwasher and then when dry roll them up and slip a napkin ring or rings cut from and empty paper towel roll so they fit easily into a drawer. These things are fantastic and have paid for themselves many times over in the superior non stick surface, ease of clean up and the cost of parchment paper and or/aluminum foil I used prior to discovering these.
