Having had a "mid tier" quality baking set of Calphalon pans for the last 8 years, I was curious to see if I could discern a difference with this Signature "top tier" set -- in short, the answer is definitely yes. The pans and cooling rack themselves are quite a lot heavier than my other calphalon pans; the interior of the pans is listed as ceramic, and you can tell by the weight alone. I've never had baking pans really successfully be non-stick in practical use, so I tried out muffins in the 12-muffin pan and did 10 with wrappers and for 2 just greased the pan with a very small amount of crisco to see how the non-stick aspect performed (see pics). The 2 muffins without wrappers slid out effortlessly after baking. No need to run a knife around the edges, tip the pan sideways or perform other Houdini-like tricks to try and get them out like I've done with my older pans, I just picked the muffins up gently by the tops hot out of the oven and they lifted right out of the pan. The baking has also been very even with this pan set, with nicely equal browning for everything we've made. The lid to the muffin pan does feel like a very light weight plastic, so I'm a bit dubious how well the lid would hold up to a lot of abuse, but it works fine in terms of fit and is a convenient addition for transporting cupcakes, etc in the muffin pan. The only thing I don't like about this set is the odd texture on the bottom of the pans. The pan bottoms have a grainy texture to them that feels a bit like sandpaper, and you can hear it making a scratching-like noise when you set the pans down on other surfaces. It hasn't hurt our granite counter tops or stovetop, so I'm not dropping a star since it hasn't caused any actual issues for us, but for those with a very soft or porous table or counter top materials, I'd be careful about setting these pans down on those surfaces. Note that while the pans are dishwasher safe the box recommends hand washing, and we've found the pans to be very easy to clean up with hand washing as batter remnants wipe right off with the non-stick finish.

While only time will tell how the non-stick finish holds up, so far I've found the Calphalon Signature Nonstick Bakeware to have excellent performance. There is zero sticking, and the oil from baking beads up on the finish (rather than burning on).

FIRST IMPRESSIONS: I like the Calphalon Signature Nonstick Bakeware more than I expected to when I first opened the package. The finish wasn't at all what I expected. It's something of a battleship gray on the exterior/bottom, with a slight sandpaper-y grit in the finish, so not entirely attractive or pleasant though I do like the industrial/professional theme. The interior finish is also unexpected, though in this case in a rather fabulous way - it has a kind of black granite effect, with a very subtle pattern. Quite nice. (I tried to photograph the finish in the attached photo of the top and bottom of the cake pans.)

DESIGN AND CONSTRUCTION: The design and construction of the pieces seems very good, not surprisingly, with heavy gauge metal and a very solid finish.

-The cooling rack fits perfectly into the sheet, if you want to use it or store it that way. (See the photo I've uploaded.)

- The cover fits perfectly onto the muffin pan, and locks on. You can also store the pan inside the cover, which helps with cabinet space. (See the two attached photos.)

- The cake pans have straight, vertical sides, so they don't stack. (See the attached photo.)

- The muffin pan doesn't stack with my others (including some Calphalon pans), as spaces are a little further apart. The overall size is about 11-1/8 x 15-3/4.

BAKING PERFORMANCE: What really matters is the performance, and so far that has been great. I would suggest experimenting with baking times, and being careful to watch the progress until you see how this sheet affects your recipes.

ITEMS IN THE SET: The perennial question with sets of bakeware or cookware is whether the items in the set suit your needs. You can, of course, see for yourself. Personally, I would have preferred a medium size, deeper rectangular pan rather than the cover for the muffin/cupcake pan. I'm not sure we'll use the cover much. But - I am feeling inspired to get our kids to bake cupcakes and take them somewhere. We may become those people who bring cupcakes.

MAINTAINING THE FINISH: Burned-on food, especially burned-on oil, is the mortal enemy of non-stick finishes. So do the best you can to avoid or delay that - clean the bakeware carefully after use; use as little added oils and fats as possible; and avoid allowing the bakeware to stay in a hot oven longer than is necessary.

We also use different sheets for baking different foods (such as cookies or chicken). For some foods such as chicken (and perhaps for higher temperatures) it seems hard to avoid food baking on over time. Using different sheets means we always have some where the finish is still in great shape, for the foods where that's critical to getting a good result.

PFOA & PTFE FREE: I very much appreciate being able to avoid questionable chemicals in the cookware or the manufacture of it. Better safe than sorry.

ISSUES:

I can hear the grit on the bottom slightly scraping when I take the pan in and out of the cabinet. I'm unclear on what performance or aesthetic benefit the grit was intended to deliver. It's nice enough to look at, but to use a bit less so.

The price is substantial. Personally, I get enjoyment from well-made tools and utensils that are perfectly suited to the job they need to perform. So on a cost-per-year basis it seems reasonable for what I get. And I will note that if you're patient there are discounts on Calphalon available from time to time during each year, to improve the value.
