Sous Vide Is Easy. Don't Make It Hard

There are other ways to insulate your vessel, protect your counter tops, and limit evaporation. I doubt there are easier and simpler ways though. My sous vide setup gets up to temperature RIGHT NOW and stays within a tenth of a degree throughout the cook. I've never had to add water even on the long cooks and I've even traveled with the circulator running in the truck bed with little spillage since the lid works so well.

If I had it to do over again, I'd probably look for the same thing in a larger size. I'm not going to knock this one for that though as the size is clearly listed in the description.

I love the silicone lid

I had the same size container from another manufacturer. I have a case of Reverse-Midas at times - everything I touch turns to ... About two weeks ago I was doing a nine-hour skirt steak and the darned thing sprung a small leak. I put it inside a baking tray. I spent about seven hours bailing the tray and refilling the tank with hot water.

Anyway, for longer cook times I was using aluminum foil. The silicone lid is a whole lot easier and retains heat better. This reduces evaporation and saves energy.

You need to connect the Anova losely to the container then cover and reposition the swirler to align with the hole in the cover. Then tighten. Simple enough but I managed to screw it all up the first time I used it. Sometimes I need adult supervision.

Warning: does not fit the new Anova Nano Sous Vide!

This does not work well with the Anova Nano due to the corner location of the hole, and due to the Anova Nano's smaller clamp width. This would not be an issue if the hole was on a side instead of a corner. The Anova Nano also has a smaller diameter so it doesn't seal around it as well. This will still work by mounting the Anova Nano on the almost corner, but not nearly as well as designed.

The container seems a little thin on the plastic. I'm guessing the Rubbermaid or other versions are heavier duty and better insulators, but I wanted to buy a container and lid combo so that the lid would be sure to fit well. Turns out not to be a good choice due to my Sous Vide being the Anova Nano.
