Anyway I followed the recipe to a T that came with this new purchase. OMG I couldn't get it to come together, it was beyond dry. I added in a little more water and then the dough was too wet to pass through the machine without distorting the pasta shapes. I had a total mess on my hands. I like an idiot started with the Fussili disc. Anyway after much online searching for Extruded Pasta recipes, I stumbled upon a fantastic site and recipe. You want a dry mix to pass through the machine so your shapes hold true and don't stick to each other when you cut them. I'm in love now with this simple recipe I found. It works every time like a charm. My biggest problem is cutting all the pasta to be the same size. When I make small macaroni I run the machine, count to five and cut, repeat and keep adding in more dough crumbs. Cleaning is a breeze as long as you clean out any globs of dough left and then just let it dry overnight. In the morning the dried pieces of dough fall right out.

I used this recipe
2 cups flour
1 teaspoon salt
3 eggs
Mix all ingredients in your kitchenaid bowl with a fork till egg is mixed enough to use your hands, not do will be flakey and it will be hard to get everything to stick together but do not add anything else knead as much as you can the place your dough hook on and turn it into setting 2-4 and let it knead for 10 Minutes checking it to makes sure it's actually turning every 2-3 minutes, let rest in plastic wrap or zip lock bag in fridge for 40 minutes ( I skipped this step) but it didn't effect my pasta. The dough turned out between soft but more dry which I found is the only way to make pasta with this attachment without it coming out and all the pasta sticking together. Cut dough up and roll into walnut size balls cover with damp towel

The Press seems to be well made, with a nice variety of pastas to pick from. Easy to set up and use. I expect nothing less from KitchenAid.
Just for the record, I make pasta with my Kitchenaid Pasta Cutter, so I do have some pasta making experience. This press will work great for you, but understand that it's all in the dough. It can't be too dry or too moist. Dry dough will crumble and not stick together, too moist dough will clog the auger and stick to the discs. If it crumbles in your hand when you knead it, it's too dry. If it sticks to your hands, it's too moist. You can sprinkle it with flour or wet your fingers when you knead the dough to get the right consistency. You can experiment with dough recipes in the book that comes with the press, on the Kitchenaid website and there are dozens of recipes on various websites on line.
Making the dough is a little time consuming, but OMG, it's worth the work to get great, fresh pasta. You will need about 1 1/2 to 2 hours at least, as you have to let the dough rest for about 1/2 hour before forming the little "meatballs" that go in the auger, the time for the pasta to be processed, drying time, and the most time consuming thing... cleaning the discs. If you're not prepared the spend the time, your press will sit on the shelf forever, so you really do have to make the commitment.
Cleaning the discs is the WORST part of the experience. They only way to do it is with the little pick that comes with the press, as you can't wash them. It's best to let the leftover dough dry thoroughly, then sit down, have a glass of wine and pick out the rest of the dough that doesn't fall out when you tap the disc with your hand. That's why I gave it only 4 stars.. cleaning and I didn't have any wine.
Hope you like your Kitchenaid Pasta Press as much as I do. Hopefully with the information I left your first experience won't be too traumatic and you will enjoy eating fresh pasta for many years.
