If you buy the 70% or 85% bar, then you are safe. They do not use the dutching process (use of an alkalizing agent to process cocoa) for these two products. However, Lindt uses the dutching process for the 90% bar, so beware. This process unfortunately takes many of the flavonoids out of the chocolate, deleting the antioxidant ability it might have had. I have also heard bad things about the soya lecithin they use (interrupts testosterone production) but this may just be a rumor or an over-dramatization of its effect.
Therefore, stick with the 70% or the 85% bar if you want the health benefits of eating this chocolate. And, believe me, Lindt is the way to go for this benefit, since these bars taste great, and they are some of the cheaper quality bars on the market. Don’t get me wrong, they are not gourmet chocolate bars, but they are quite good, and they also preserve most of the health benefits too.
UPDATE: Lindt 78 is now not-so-proudly made at Lindt's crayon factory in New Hampshire. But they seem to have kept the recipe the same as what it is in their chocolate factory in France - Lindt 78 seems to have survived the transition. Will update again.....
Enter this new product, Lindt 78%, made in France. While not nearly so lovely as French-made Lindt 70%, it is very good chocolate. Lacking the nuance of French 70, it's more of a kinder-gentler French 85 - it is in any case, far superior to US-made crayons. If sneaking into Canada isnt an option, this French-made Lindt 78 is a fine substitute.
(And if you were thinking about ordering real French Lindt 70 from Amazon-Canada - you will be hit with a $60 international shipping fee.)
Yes, I'm bitter. I didnt even eat crayons in kindergarten. New Hampshire-made Lindt is a crime against gastronomy. Just wait until they find out that Americans have access to real chocolate again, and that New Hampshire crayon factory will be counterfeiting Lindt 78 too.

But do keep in mind that dark chocolate contains caffeine. According to the Lindt website, their dark chocolate contains about 20mg per 1 oz, or around 70mg per bar. So, if you are sensitive to caffeine, would avoid eating this at night. Would be nice if Lindt could print an exact caffeine amount on the packaging.
