I purchased this and seasoned it following the instructions on their website. Proceeded to to bake a seed bread in a 350 degree oven. The pan warped at this temperature, but flattened out upon cooling. When I removed the bread from the pan, there was a blue coating all over the bottom. It did come off when I scraped with a knife. The blue had lightened from the pan where the loaf sat. The raisins in the bread ate right through the bluing. What is this stuff coming off onto my food? I don't think this is heat treated at all, but some kind of chemical coating. Called the company a week ago to try and get some answers. Sent them pictures of pan. Said they would get back with me. Still waiting. Will be sending this back.

Just received a call from Matfer. Was told this is a blue coating compound that they put on these sheets. Could not tell me what the coating was. Very disturbing. Will be purchasing the JB Prince Half-Size Black Steel Sheet Pan on Amazon. Called JB Prince and was told this is just plain black steel. It cost less also.

Just received my baking sheet. Overall it looks and feels solid and well made. Not too heavy either which was something I was worried about. However, there are some weird markings and rings on it. (I attached pictures to show!) I imagine from the polishing process but it doesn’t show those on the advertised picture so I‘m not sure what to make of it. I was expecting it to be smooth like on the original picture. I think I‘ll be keeping it though and testing it out soon after I oil and preseason it. I‘d be curious to know if anyone else had those or similar markings on the sheet and if they kept it or decided to return it?
Some of the edges are also a little rougher and not as well rounded and/or polished but I’m not too worried about it. Just something I wouldn’t have expected for a baking sheet with this price point. (I purchased it for $30 but it has since gone up to $36!) So 4 Stars for now from me because of that. I‘ll try my best to remember to update this review after I oil/ preseason the sheet and use it to bake something. :)
UPDATE: After I called the manufacturer and confirmed that the condition described above is not typical I was encouraged to ask for a exchange through Amazon. I decided to exchange it for the same and just received my replacement. Unfortunately, it has similar markings. Both look like they could have a very thin plastic film on them which would be the only explanation for the way it looks but they don’t. There is no film. They just seem to not been sufficiently polished perhaps? Not sure. The replacement has rough edges just like the first one as well so overall both have the same issues which I’m a little disappointed about. I will most likely call the manufacturer again and probably pick the better one and return the other. I will update when I finally get to use it but for now losing another star seems in order. Wish me luck! :)
