Bad impulse buy! Don't even think about it!

First of all I must of missed the detail in its description that it has a nonstick coating on it. I do not use nonstick products which is why I have loved carbon steel as it builds up its own natural nonstick properties with use. The packaging stated that it would arrive with a protective silicone coating that would wash off with soap and water. I used boiling water from my tea kettle and no way the coating came off even doing it 3 times leaving me with what is obviously a non stick coated pan. Second major issue is the thin material. The directions say not to use high heat which I'm sure would warp this pan. I have never seen a skillet this thin. I did reheat a stirfry using the pan and it certainly cooked as a nonstick pan. I was actually hoping the vinegar base of the stirfry would reveal the carbon steel under the coating as my son has many times used my other carbon steel pans to cook stirfrys and it will strip off the built up pantina that had nicely been built up on them. Not with this pan, food just slid off and actually had a beading of the coconut oil left as on a nonstick pan. Third is the handle. It gets very hot and must be used with a pot holder or silicone cover. It would cause major burn if handled accidently bare handed. So best if you added in the cost of an additional cover with purchase. With the $30 price of the pan plus $12 price for the cover which will not come off, I would have been better off to spend not much more to buy a good carbon steel pan that would last forever. I love the Aus-ion! They are well worth the investment! They darken beautifully with use much better than the De Buyer even. Spend the money upfront and you will not regret it. Merten and Storck is a great dissapointment!

Pay no attention to the negative reviews; these people don't know what they're talking about. As a chef for over 40 years, I can attest to the quality and durability of these pans, made in Germany. No seasoning required, that will happen as you use them. Easy to clean, and fast heating. Our preference for the restaurant biz.

After following the instructions provided, I cooked some bacon and cleaned the pan after it cooled down with water.

Immediately whatever the surface began flaking off, and for something that's supposed to be carbon fiber, I'm pretty sure this is not supposed to happen.

Do not buy this.

I must admit I'm a cast iron addict and love using my heavy-duty cooking "artillery" as often as I can. However, heavy is a key term when using cast iron so I was excited about trying this option with the thought that it might allow me to use cast iron techniques to give a new perspective on tried and true sauté recipes. Sure enough, this pan has given me an entirely new range of cooking capabilities such as producing crusts on delicate foods, generating fonds to die for, perfect Patty Melts and killer, olive oil kissed Spanish Tortillas with the perfectly browned bottoms that are so hard to do in basic non-stick pans. I'm sure I'll find more applications as I continue to enjoy this pan.

I've been cooking more or less exclusively on cast iron for the last decade and am a firm believer in it. I started learning about carbon steel pans a year or so ago and finally decided to try one. I could not be happier with this. Normally I'm not a fan of factory seasoning but since I felt too lazy to sand it off I left it alone. Washed/dried/oiled it per the instructions and decided to try frying an egg, fully expecting it to be sticky like new cast iron typically is. Not at all. Put a pat of butter in first and dropped in the egg. Once the white had solidified I shook the pan and the egg just slid around. I didn't even have to break it loose with a spatula. Slid right onto a plate. Seriously, I love this thing.
