Then we found this. It's great! Works just like a normal springform pan, but the silicone edge actually gives it a few advantages: it's way more waterproof than the metal pans, the flexible edge means that you can more easily detach whatever you baked from the side of the pan (with metal pans I would always have to use a knife to cut around the edge, which causes the non-stick coating to flake off even faster!) and when you just want to get out that first piece you can open it a little bit to remove the piece without having to pull the whole thing off. It also goes in the dishwasher very easily, and because it holds water better you can soak it in the sink first.
Love this thing! We ended up buying two.
Since the sides are so floppy I wrapped it in tin foil and scrunched the edges of the tin foil to make "handles" supporting the base. I also needed the tin foil for a water bath. But I would have used it anyway just to make this pan easier to hold and to prevent butter from leaking to the bottom of the oven (which I forgot initially...whoops)
Serving was very easy because the glass is totally flat which makes cutting easy - no lip around the edge.
The only thing I need to figure out is the bottom id the glass had some leaked butter on it when I went to serve it - I needed another plate underneath - so if I want to take my cheesecake to a party someday then I think I need a solution to that. Maybe it's better to elevate the cheesecake pan on small rack while it cooks but then would that work with the tin foil and water bath? Or maybe it's better if I transfer the cheesecake to a clean cake platter with its own lid. Hmm.
The sides came off easily & my cheesecake came out beautiful!
I tested it for water permeability before I used it.
Leaked alone & after I wrapped aluminum foil around it.
I cooled it on the rack, not on a baking sheet.
The next day when I used my oven, my house filled with smoke from the butter that had leaked out of the pan from my crust.
However, when I filled it with my largest measuring cup, over the sink and holding it with my other hand, I could
hear water dripping- about once a second. The eight cups of water filled it to about 1/2" below the top. Water was collecting under the clasp which joins the ends of the silicone band, then dripping.
Took it apart several times and tugged on the ends of the band while inserting the clasp, but the clasp would not keep the ends together. See the photo I have uploaded-- only the very outermost edges would get flush. Water also leaked from the other side (about 160 degrees away counter-clockwise), but far slower. After 15 minutes, I had a depth of 1/8" of water in the quarter-sheet baking pan. Not acceptable.
I have never had a springform pan that leaked, although I have always paid more than thirty-five dollars for each of them. (They keep 'disappearing' from my kitchen!) I wanted silicone for convenience and saving time, now that I need to bake several at a time for gifts and large gatherings.
I have bought standard, metal Norpro pans before and been more than satisfied, but this pan needs to be returned for a refund. Leaking springform pans I just cannot accept-- more trouble than they're worth! That's a serious deal-breaker for me.
