The Green Earth Pan by Ozeri is one of the world's first frying pans to offer a non-stick solution while remaining free of PTFE, perfluorinated chemicals (PFCs) such as PFBS, PFAS, PFOS and PFOA, APEO, GenX, and the lesser known chemicals NMP and NEP. Conventional pans sometimes achieve their non-stick performance through a waxy synthetic coating of PTFE (PolyTetraFluoroEthylene), which under extreme temperatures decomposes and releases fumes that can be harmful to humans. PTFE is often manufactured with the aid of PFOA (PerFluoroOctanoic Acid) and other perfluorinated chemicals, potential carcinogens which the EPA has classified as a 'persistent pollutant of the environment,’ and APEO (Alkylphenol ethoxylates), which are restricted in Germany due to their poor biodegradability and toxicity. Labelled ‘forever chemicals’ due to their tendency to accumulate in people’s bodies, the EPA and FDA have cited studies that suggest associations with several kinds of cancers, liver problems and other issues. The Green Earth Pan's ceramic coating never releases these toxic substances into the environment. Instead, the pan utilizes an inert, 100% ceramic coating, largely inspired by nature, and applied using a water based Sol Gel Technique that is also free of the potentially harmful chemicals NMP (N-Methyl-2-pyrrolidone) and NEP (N-ethyl-2-pyrrolidone). Durable and scratch-resistant, the Green Earth Pan allows you to sauté, fry, bake, boil and braise with as little as half the oil normally used. The Green Earth Pan is made of die-cast aluminum that allows for even cooking without hot spots. It boasts a magnetized bottom for rapid heat transfer on induction stoves, and a heat-resistant silicone coated handle. This version of the Green Earth Pan features a honeycomb ceramic cooking surface designed to create small air pockets under food for optimized heat distribution. Coating by Weilburger, Germany. were showing the damaged pan or food that stuck to the pan. I've not taken any special care with mine other than using common sense (no metal utensils, wash and dry soon after using, don't burn food in it, store with something protecting the face of the pan, etc). I'm pleasantly surprised that it has held up as long as it has. Take care of it and it will serve you well.

After use yesterday I soaked the pan in warm water overnight and this morning still find it difficult to clean off the residual egg. In the past any residue had wiped off after soaking. I've posted a picture (after soaking) where you can see the sticking seems to be on the raised surfaces of the honeycomb grid. The smooth ceramic sides and the honeycomb "pits" seem to have released the egg quite well. I wonder if the honeycomb pattern is part of the problem, but perhaps it has an important functional design purpose? (I'm sure someone out there will have an informed technical opinion.)
Overall I value the concept of a ceramic non-toxic non-stick surface (I also own their 12" pan - I use it as a specialty pan for cooking fish and it works okay) and am searching for other options for my omelets based on the disappointing service life of this pan.
Notes on usage and care (I'm a little obsessive about this): I always applied a thin layer of olive or canola oil (never cooking sprays), enough to cover the honeycomb pattern at the bottom of the pan, and heated it gently (never higher than Medium setting on my electric stovetop) to avoid heat damage. I have used only plastic utensils. After use, I always let the pan cool until comfortable to touch before adding warm water to soak for at least 30 minutes before hand washing with dish soap and a soft sponge only. This baby has never seen the inside of any dishwasher. It is stored on a hanging rack to avoid scratches and dings.
A note on the seller: I've purchased a few items from Ozeri (including the 12" ceramic pan and an oscillating fan), most recently about a year ago. After buying each item I received a promotional email with a code for a discount on their double walled glasses. Unlike some other Amazon Marketplace sellers, this offer did not come with an exhortation or requirement to post a review on Amazon. We never took up the offer but in my opinion I thought it was a nice customer loyalty touch without being overly directive. I'd likely be willing to buy other products from them despite my suboptimal experience with this specific product.
