GABRIEL MILLER is an author, speaker, chef, and avid gardener. He runs the blog Plant Based Gabriel (PlantBasedGabriel.com), which helps people transition to a plant based diet and vegan lifestyle. In addition to producing helpful recipes and videos, Gabriel also loves working on his vegan and organic vegetable farm.
Sample Recipe: Strawberry-Avocado Toast with Balsamic Glaze
Serves 4 | Prep Time: 5 minutes
When it comes to speedy breakfasts, toast is a mainstay. But this recipe isn’t just for any old toast—this is toast taken to another level. The avocado adds creaminess, the sliced strawberry brings a fresh fruitiness, and the balsamic glaze rounds out the flavors with a hint of acidity and sweetness.
Mash one-quarter of the avocado on a slice of toast. Layer one-quarter of the strawberry slices over the avocado, and finish with a drizzle of balsamic glaze. Repeat with the remaining ingredients, and serve.
If you can’t buy balsamic glaze, make your own! Put balsamic vinegar in a small saucepan and cook, uncovered, over low heat for roughly 45 minutes, or until it’s reduced to roughly one-quarter of the original amount of liquid.
- 1 avocado, peeled, pitted, and quartered
- 4 whole-wheat bread slices, toasted
- 4 ripe strawberries, cut into 1/4-inch slices
- 1 tablespoon balsamic glaze or reduction

Gabriel's recipes look delightful (and doable), and he lists calories per serving and nutritional values for each recipe. I'm starting with the Kindle version but will get the hard copy too because I'm still of the old school ;-)
I highly recommend this title and look forward to more from Mr. Miller!
