So this just didn’t work. I bought it to make vegan butter and I wasted about ten cups of coconut oil doing everything in my power to make it emulsify over the course of about 4 batches. I finally admitted defeat, and my mother in law sent me the brand she used - it was a success (Fern soya liquid lecithin). Worked like a charm, all other ingredients the same as the batches that did not work with this lecithin. I returned it promptly.
This was used as a flavoring and stabilizer in making gummy bears for my great grandchildren. It’s also allergy free. It makes your soups and candys mix better.

On the plus side, this product is palatable and unsurprisingly tastes something like sunflower seeds with a slight bitter aftertaste which should not be a problem in savory dishes but will need some stevia sweetener in shakes. For this reason I am giving it 5 starts in flavor rating and value for money. I tried this lecithin in a shake by adding to a blender first and then adding my liquid, which was cashew milk. After adding other ingredients and blending at max speed the shake looked OK but after pouring it I could see that a lot of the lecithin had just stuck to the bottom of the blender. It would have been better to add the lecithin last, while the blender was running, but nevertheless the takeaway was that this lecithin is very gooey and hard to blend into a water based liquid. To be fair, I do not know if this is typical of liquid lecithins. I also tried to blend into hot herbal tea, which resulted in partial success but also a lot of gelatinous globs rather than a homogeneous blend. Adding to some to melted butter in a hot water bath resulted in a rubbery mass. Heating does not seem to improve blendability and seems to make it stick to sides of glass. For these reasons I gave it 2 stars for absorbency. I don't see how this liquid lecithin could be used as an emulsifier in cooking unless there is a reasonably easy way to blend with water and oils. Perhaps there are techniques/recipes for doing so. I will contact the maker for advice and possibly revise this review pending their response.

I purchased this product as a food thickener (salad dressing) but it is so gooey it doesn't blend. Is there a secret to making it less viscous? I tried gentle warming but to no avail. Is there something wrong with mine or is it always like this? Did I buy the wrong product or has mine be subjected to some condition that makes it too thick for use?
