A search on Amazon suggested several options,
This press looked promising, in comparison.
Having used this now daily, it satisfied all my expectations.
I rinse the tofu, pat dry, place into the press and adjust the tension, leave in fridge overnight. My photo compares before & after pressing.
Firmness, varies from brand to brand of tofu.
I don’t entertain making a “meat” clone.
However, texture and palette experience is key.
Rehydration, with a marinate is practiced, the flavor of ones choice. Vacuum marinate overnight seems to provide many options, then a “air fryer” for an oiless cook.
This press is part of my vegan protein prep, allowing me to control the process with no hidden chemicals!

**8 month update: So, I can truthfully give this tofu press only one star. It’s really good in theory. However, the plastic clips just pop right off now because of plastic fatigue. I can’t actually lock them in place without them popping off and flying across the kitchen.**

I got tired of pressing tofu with books & paper towels and/or dish towels. I figured that there had to be a better way. This tofu press worked great initially! You start the rubber bands on the top notch then work your way down the notches as the water is squeezed out of the tofu. I bought this around the end of February and by April it was already starting to break. One side has stress fractures in the plastic hinge (as you can see the lighter color in the photo). Now the hinge won’t flip down and tighten all the way as the metal piece will just pop out of the plastic clip. It’s a bit irritating because we don’t use this all the time, only about 1 to 2 times per month and you’d think it would have held up better.

I love this kitchen tool! Since I purchased it, I've incorporated more tofu dishes into my diet because it's less of a hassle to prep versus a skillet w/cans overnight.

How I use this: I usually keep my extra firm tofu in the freezer because it becomes more porous and easier to work with—basically it soaks up your marinade better for a more crispy and chewy texture. I thaw the tofu overnight, drain, and then use the press for about an hour. The result is a flat, drained, non-cracked tofu loaf ready for cooking!

What I like about this unit is that it's not messy. The water drains into a separate tub, so all you have to do is pour it out. My only gripe is that this unit incorporates thick rubber bands to apply the pressure. I've had it snap on my fingers a couple times, and it's difficult to use especially when I have my nails long. I'm just worried about the longevity of the equipment since it's a pricey piece of plastic. Other than that, I'm very happy with the convenience of this tofu press, and I hope it lasts a very long time.
