Tofu is amazing.....but you need to press it first

Crispy tofu stripsPressing your tofu dramatically improves the texture by making it firmer and the taste by allowing it to absorb the flavors of your dish |
Create healthy and delicious mealsWhen pressed, tofu is versatile and easy to cook with. It can be fried, baked, crumbled, scrambled or coated in breadcrumbs. |
Tofu is so versatileSilken tofu can be lightly pressed and made into mousse, added to your smoothie for a protein boost or whipped up into a healthy cheesecake |
How to use your tofu press
|
|
|
|
---|---|---|---|
Place the tofu into the inner containerRemove the outside packaging and place the tofu into the inner container |
Pull down the bandsPull down the silicon bands onto the available hooks to suit the various thicknesses of tofu. Use the top hook to press silken tofu |
Push the clips closedPush the clips down to exert a gradual, continuous pressure on the tofu for the perfect results |
Leave it pressing in the fridgePut the press in the fridge for 20 minutes to overnight so it can press your tofu hygienically and cleanly. You don't need to return to the press to increase the tension. |
How long does it take?

Expanded PressPut the tofu into the press and almost immediately a dramatic amount of water will be drained from your tofu. |
Cross-section of the press in actionAfter 20 minutes your tofu is perfect to scramble or make into bolognese. After 1 hour your tofu will be much firmer and able to hold flavor. After 4 hours your tofu will be really firm and half as thick. You can even leave it pressing all day or overnight. |
Water collects in outer containerThe water drains into the outer container so the process is clean and avoids using kitchen towels |
Pressed tofu! And look at the results! Now your tofu is ready to absorb a marinade or the flavors of your cooking |

The Tofu Xpress works like a charm. I love it, and I've had mine for about 6 years with no problems. It's very easy to use. I must admit though, I worry about possibly breaking the handle like things that are used to hold the presser down. I'm very careful with mine, because if just one breaks, my press will be useless.
Because I'm a vegetarian and eat quite a bit of tofu, I wanted another press, so that I could press more than one slab at a time. I did not want to shell out another $55 (with shipping) for the Tofu Xpress. I decided to try the Tofuture, which at $30 is still pricey, but $25 cheaper than buying another Tofu Xpress. I used it for the first time yesterday, and as far as I can tell, it does just as good a job as the Tofu Xpress. The tofu keeps its nice rectangular shape with no cracking. I end up with a nice dense block of tofu.
The Tofuture press seems sturdy enough, and the rubber band things seems like they will hold up for quite some time. If you're on the fence about which tofu press to get, I'd get the Tofuture and save a significant amount of bucks.

This press looked promising, in comparison.
Having used this now daily, it satisfied all my expectations.
I rinse the tofu, pat dry, place into the press and adjust the tension, leave in fridge overnight. My photo compares before & after pressing.
Firmness, varies from brand to brand of tofu.
I don’t entertain making a “meat” clone.
However, texture and palette experience is key.
Rehydration, with a marinate is practiced, the flavor of ones choice. Vacuum marinate overnight seems to provide many options, then a “air fryer” for an oiless cook.
This press is part of my vegan protein prep, allowing me to control the process with no hidden chemicals!

I got tired of pressing tofu with books & paper towels and/or dish towels. I figured that there had to be a better way. This tofu press worked great initially! You start the rubber bands on the top notch then work your way down the notches as the water is squeezed out of the tofu. I bought this around the end of February and by April it was already starting to break. One side has stress fractures in the plastic hinge (as you can see the lighter color in the photo). Now the hinge won’t flip down and tighten all the way as the metal piece will just pop out of the plastic clip. It’s a bit irritating because we don’t use this all the time, only about 1 to 2 times per month and you’d think it would have held up better.

How I use this: I usually keep my extra firm tofu in the freezer because it becomes more porous and easier to work with—basically it soaks up your marinade better for a more crispy and chewy texture. I thaw the tofu overnight, drain, and then use the press for about an hour. The result is a flat, drained, non-cracked tofu loaf ready for cooking!
What I like about this unit is that it's not messy. The water drains into a separate tub, so all you have to do is pour it out. My only gripe is that this unit incorporates thick rubber bands to apply the pressure. I've had it snap on my fingers a couple times, and it's difficult to use especially when I have my nails long. I'm just worried about the longevity of the equipment since it's a pricey piece of plastic. Other than that, I'm very happy with the convenience of this tofu press, and I hope it lasts a very long time.
