At Weston, we believe in the lore of food traditions. We believe in passing know-how and food tools down as family heirlooms. Homemade pasta making is one of those treasured traditions and the Weston Traditional Style Pasta Machine, now available in red, makes this tradition both easy and fun.

Families have a great opportunity to bond over the kneading of the dough, the playing in the flour and the cranking of the machine. You get a lot more than yards of fresh, homemade pasta noodles spread to dry across the dining room table. You also get the joy of creating a meal from scratch with and for your family.

To make pasta with this machine, simply prepare your dough- and feed it through the rollers to make a sheet. Then feed it through the cutter to shape your noodles. There are seven thickness settings to choose from and attachments for either fettuccine or spaghetti cutting are included.

Making Dough

Making dough for pasta is incredibly easy. Although recipes vary, you can easily make delicious dough with only three ingredients; flour, eggs and olive oil. Once the dough is made and shaped, it can used. Or, you can dry the pasta and then freeze it for a later date.

Flatten Dough

Cut a piece of rolled out dough, long enough to be easily handled. Lightly flour your work space and the dough. While slowly turning the handle clockwise, carefully start the dough into the rollers. As the flattened dough exits the machine from underneath, continue to carefully guide the dough on top into the pasta machine while slowly turning the handle.

Continue to Flatten

Run the dough through the rollers. Repeat this process several times, each time setting the regulator knob to the next setting until the dough reaches the thickness you desire. If the sheet gets too long to manage, simply cut it with a knife.

Cutting Dough

Now the fun begins. With the spaghetti/fettuccine attachment secured, choose a side and begin feeding the sheets into the machine. Lay your freshly cut noodles out on a lightly floured surface or hang them on a Weston Pasta Drying Rack (sold separately) to dry before cooking.

Buying pasta in a store is a nice convenience, but there is something special about making it at home. Not only is it a healthy, preservative free option, but most people agree that homemade pasta has a better flavor. You can even enhance the flavor by adding things to the pasta itself spinach, beets, peppers, herbs, saffron. You can also purchase additional Weston pasta cutting attachments for your machine, giving you the freedom to make lasagna, half-moon or square ravioli, linguine or round spaghetti.
