Nobuyuki Matsuhisa--known simply as Nobu to the world--was born in Japan, and trained in the time-honored sushi tradition in Tokyo before heading to Peru. He then went on to successive ventures in Argentina, Alaska, and Los Angeles, where he opened Matsuhisa in 1987. Seven years later, Robert De Niro persuaded him to open NOBU New York. Since then, he has opened over 55 restaurants and hotels across five continents.

This is NOT a cook book. It is a book you can use for inspiration and stunning photos. This so call “cook book” is a total rip off if you expect a book with recipes/measurements. I am so disappointed and feel so cheated that I will never again invest in Nobu cook books nor go to their restaurants. It is scam. An example: The “recipe” “Date cake” p. 181 says the following: “Warm the Date Cake and place on a plate. Drizzle with Whiskey Caramel on top and arrange the walnuts and Crème Fraiche Gelato. Garnish with shaved chocolate”. No doubt this cake is delicious and I want to make this one – and that is why I invested in this book. They should feel ashamed calling this a cook book. Scam, stay away from this publication (and maybe future NOBU cook books).

Paying that kind of price and not getting the full recipes is a real let down. Use it like a magazine for inspiration but be prepared to develop the your own recipes. In the book Nobu says that; (recipes can be copied but not the heart that I put in it) Well, not with this book Nobu. I'll make sure to put as much heart into developing my own ;-)

Where are the ingredient quantities.....?

First of Nobu Matsuhisa is a brilliant Chef and his food is amazing. I've had the pleasure to be able to dine at 3 of his restaurant and everything was delicious.
I already have every other book of his and have cooked several dishes from them
I was excited about ordering his book as another addition to my cookbook collection and just as excited as I flipped thru the pages to see some of the dishes I have ordered before. Beautiful presentation and the pictures are wonderful. Most of the dishes are in the other nobu books of past but I say dishes not recipes....
As I'm sure other reviews also have mentioned there are no quantities for any ingredients in the book what so ever....
Some of the dishes like the white fish sashimi with dry miso doesnt exactly need ingredient amounts as it's all pretty self explanatory, especially if your well versed in a kitchen.
But for dishes like the Monk Fruit mango mousse cake you need amounts, or the Chilean sea bass with black bean sauce. Even the basic recipe for his tempura batter isnt given amounts and it's only 3 ingredients you could spend weeks trying to get the ratio right and even if it was working would it be close probably not. Would it be easier to look in another book for a tempura batter recipe yes of course...
Given the price of this book and its utter lack ingredient amounts, it's a 70 dollar plus coffee table book.
If your looking for some recipes from nobu stick with his other books... if you want a nice coffee table book that will get you in the mood for something fancy and delicious or get your creative cooking side going sure get this but... this other books make great coffee table books as well and they have ingredient amounts ....?
