New Moon Abalone Steak

Braised abalone steak

  • ½ cup of uncooked new moon 4 in 1 superice (follow cooking instructions on the packaging)
  • 1 can new moon australia whole abalone
  • 50g broccoli florets
  • 50g barrot, diced
  • 2 cloves garlic, minced
  • 1 tbsp goji berries, rinsed
  • 2 tbsp vegetable oil
  • 100ml abalone brine
  • 100ml water
  • corn starch slurry (mix 2 tbsp corn starch in 50ml of water till smooth)
  • 1 tbsp oyster sauce (adjust to taste)
  • 2 tsp dark soya sauce (adjust to taste)
  • dash of pepper (adjust to taste)

  1. Remove abalone from can and retain about 100ml of abalone brine.

  2. Heat 1tbsp of oil over medium heat; sauté carrot and broccoli for 3 mins. Set aside.

  3. Add another tbsp of oil, stir fry minced garlic till fragrant.

  4. Add in abalone brine, water, oyster sauce and dark soy sauce. Bring to boil and reduce heat to simmer.

  5. Add goji berries and corn starch slurry. Mix well.

  6. Once liquid coats the back of the spoon, remove pan from heat and add abalone.

  7. Make rice into a patty shape and lay it at the centre of the plate with carrot, broccoli and wolfberries around it. Place whole abalone on top of the patty and pour the gravy over.

  8. Serve immediately.
