I have been using this book and had great success until yesterday. I made the Rosemary bread 2lb loaf exactly as written. Unfortunately, the recipe uses way way too much water. The goopy mess it became went over the top and I spent hours cleaning my machine. The amount of smoke filled the kitchen, so I had that to deal with as well. I can only hope my brand new Cuisinart Bread Machine works when I use it next. Upon examination of the recipe afterwards, I believe the 1 and 1.5 pound recipes might me correct. Oh, how I wish I'd not tried this recipe. WHAT A MESS!

I did the Toasted Hazelnut Bread exactly to instructions for the 2 lb loaf, set my bread machine for two lb loaf and the dough overflowed. I spend hours cleaning up my bread machine. I ask the author to check the measurements given for the two lb loaf in this recipe...typos?
I have followed these recipes to a T, but each time it just doesn't work. I have made three different loafs of bread from this book and each time the bread doesn't rise and doesn't cook all the way thru. It's not my machine, I make bread twice a week and I use the same kind of recipe, but from a different book, no problem there.
If the book were entitled Artisan breads I would have steered clear of it. I thought if it said NO FUSS they would be good old fashioned family bread recipes. Not so..........the first recipe was white bread and that was it, everything else were anything but no fuss and required special flours. The recipes that I thought for sure would be in the book were Sally Lunn and Foccacca along with a few more everyday breads like white sandwich bread.
I made the cottage cheese loaf yesterday which way overproofed and was mushroom top and sunken, and the texture inside was subpar, but I thought maybe it's because I made it rather than my boyfriend. He makes better bread somehow even though we follow the same steps. And every recipe that came with the bread machine has been great. But then today he made the tomato bread. Came home to 5 minutes left on the bake, looking like the picture I've attached. It appears it didn't rise even a millimeter during all three rises before baking. I don't know what has gone wrong and I don't feel like trying another recipe to find out.

In comparison, the few recipes that came with the machine's own recipe book are all perfect. The book has no advice how to adapt the recipes to your specific machine's, and it's clear that the recipes have never been tested with a variety of machines.
