I have burned through five woks in the past decade, kept trying non-stick. What a waste. Of money, time, resources [environment]. This is a wonderful pan and now I do everything in it. It's truly nonstick. It's more nonstick than my environmentally friendly nonstick pans I got at Canadian Tire. I won't bother with nonstick ever again, except for the pot I heat milk in and my little T-Fal frying pan for crepes. I LOVE this wok. I have a new Frigidaire induction cooktop which heats very unevenly [repairs on Friday] and it still performs well.
Man, I really like this pan. I have joint issues which leads me to require lighter options. This pan weighs in at 1.29kg which is 2lb 13.5oz. When cooking tortillas and eggs, they glide across the surface like I'm cooking on an air hockey table. I followed the instructions to remove the protective layer it comes with and it cooked beautifuly the very first time. It took no work or time to "season" it. It does discolor after use, but that in entirely normal. If I didn't have high iron issues due to a genetic issue, I would use nothing but this type of cookware. It is far easier to clean and lighter than cast iron, with similar heat distribution properties. I'm including a photo of what it looks like after cooking with it several times, do not be wary of the color change — it still cooks like a dream!
I've been looking for a multi purpose wok for a while. One that was of the right size. I think this is it! Not ad heavy as an iron/ cast iron one and not too big either. You will have to care for it when it's new and season it making sure you polymerize the oil so that you get a good non stick surface. Occasionally food will get stuck but I know that I was to blame. A quick wash under hot water and a gentle scrub cleans off any stuck bits fairly easily. Care for it well, oil it occasionally and you will be happy with it. It definitely gets better with age like a fine wine
This is the best carbon steel pan I own. Unlike some other brands it is easy to start using almost immediately when you receive it. There's no coat of bee's wax laboriously remove. Just wash it according to the simple directions and it's ready to use.
It's great for flat breads including tortillas. The 10" diameter makes it a bit large for crepes that are intended to be rolled closed, but is fine for crepes to be folded closed. I do make rolled crepes with it, though. It does require dishes that are 10" in diameter.
I use it mostly on an induction burner and sometimes on an electric coil stove. It's a very good tool that's very well made. If I were in the market for other carbon steel pans I would consider this brand first.
As a used item, I was surprised to find no significant problen=ms with the paella pan. It has replaced my woks as a primary stir frying pan because of the even heating and high heat performance from a non-commercial stove. The finished dishes are at least as good as I can find in restaurants, and I know the quality of the food, spices, and cooking oils I use. This is a great pan for this purpose; and, yes it is also a great paella pan as well!
I've grown quite skeptical of carbon steel cookware, mostly because it's much higher maintenance than one is led to assume. I've already given away 2 carbon steel frying pans that simply weren't up to snuff. So I was pretty certain this paella pan would be another fail, especially given the moderate price. It appears to have proven me wrong. It's easy to clean and fairly low maintenance. The heat distribution is pretty good and the large size makes it a versatile solution when you need a bigger pan. Recommended.
After researching non stick, cast iron and carbon steel options, I chose this pre-seasoned cast iron wok. Before the first use, I washed it according to instructions with warm, soapy water. I was worried that the washing would cause food to stick - but not at all! I made a stir fry and it cooked well, without sticking. the wok is much lighter than cast iron, and I can use metal spatula! Glad that I chose this one over a wok with non stick surface (that requires limits on heat and can only use plastic spatulas), or cast iron that is so heavy.
